shake and bake... with a twist!

the other day, I was experimenting with my ingredients, and I invented a simple but delicious recipe!

Spinach Mozzarella Chicken Breasts

ingredients:
1 package Shake N Bake for chicken, crispy
4 small handfuls fresh baby spinach
4 large chicken breasts, boneless, skinless
1 package shredded mozzarella, or Italian cheese
spray oil

directions:
1. Fillet the chicken, leaving attached on one side, making sure to cut the thickest part.
2. Stuff the chicken with the spinach and cheese liberally.
3. Cover both sides of chicken with Shake N Bake seasoning.
4. Spray oven pan, and place chicken breasts in pan, leaving space between.
5. Bake at 350 degrees for approximately 15-20 minutes, or until chicken is cooked through.
6. Serve with potatoes, vegetables, or invent your own side!

I bet you could put some baked ziti or a lasagna right next to that in the oven, too.
Lasagna counts as a side dish, right? :D
