Mexican Casserole

ingredients:
shredded mixed cheese
2 medium zucchini
2 medium yellow squash
10-12 mushrooms
1 pound ground beef (I use turkey)
2-3 cups spinach
1 small onion
2 cups uncooked rice
salsa
sour cream
taco seasoning

Directions:
1. Cook rice, with a few tablespoons of salsa, in a rice cooker (or on stove).
2. Chop zucchini, squash, mushrooms, and onion into similar bite-size pieces.
3. Cook beef/turkey in oil with seasoning. Drain.
4. Sautee vegetables in oil with seasoning. Drain.
5. In a casserole dish, spread rice evenly, sprinkle a thin layer of cheese, then layer veggies and beef/turkey, and finally cover liberally with cheese, and sprinkle salsa around.
6. Bake for about 10-15 minutes until cheese is melty.
7. Serve with a dollop of sour cream.
