Homemade Frozen Breakfast Burritos

That's right. I said homemade and frozen!! This yields about 4-6, depending on how big you want them.

Here's what you'll need:
4-6 large flour tortillas
1 lb. ground breakfast sausage or turkey breakfast sausage
6 eggs
splash of milk (a few tablespoons)
1 package shredded cheese of your choice (I used fiesta blend, the chipotle was too spicy!!)
chopped veggies of your choice (I like it packed with veggies, so I add mushrooms, spinach, onions, bell peppers, and zucchini)
vegetable oil for cooking
seasoning of your choice, i.e. taco seasoning, seasoned salt and pepper, tobasco, etc.

Directions:
1. Brown sausage on stove. Drain.
2. Cook extras (vegetables, etc.) to desired consistency, adding seasoning of choice. Drain.
3. Scramble eggs, add splash of milk to keep them fluffy, and cook in same pan from sausage for extra flavor. Drain if necessary.
4. Warm tortillas in microwave, approx. 20-30 seconds.
5. Assemble burritos, leaving space at both ends to close: 1)tortilla, 2)cheese, 3)eggs, 4)sausage, 5)vegetables, rolling each tightly and placing in its own Ziploc as you go.
6. When reheating, place on a plate and heat in microwave for about 40 seconds, turn over, and heat 30 more seconds, repeating until hot. Be sure to wrap it in paper towels before you leave the house, as they do drip! =]
