I'd like to request your easiest- and I mean simple- vegan recipes for Thanksigving/Christmas. While I'm still going to offer some traditional options for the omnivores in my family, I'd like to have some options available for my herbivores. Keep in mind I don't usually stock things like nutritional yeast, so a lot of what I've come across sounds intimidating. Please help!

Cut up some sweet potatoes into about 1/4 inch pieces. Toss them in a mixing bowl with some cooking oil. Season with garlic powder, chili powder, turmeric, Italian seasoning, salt, and pepper. Put on a baking sheet and bake at 400 degrees for 40 minutes. It's a crowd pleaser!

Most holiday sides can be made vegetarian or vegan. Our family has adapted things like adding vegetable stock to the dressing instead of drippings and meat stock so everyone can enjoy it and no one has noticed the difference. We're vegetarian, not vegan so it's a little easier. Also keeping some things to the side to add on at meal time, like bacon crumbles or cheese topping. We love roasted brussels sprouts with onions and a squeeze of lemon juice over the top before serving. I know that with holiday dinners, we are often preparing multiple dishes and oven and stove space can be at premium. Whole Foods is offering a line of vegan dishes under $10 from Chef Chloe Coscarelli. You may still want to make something homemade but this could be an option to save you some of your precious time!

You don't have to add the creme fraiche or nutritional yeast. It's fine without it.
Annie, I don't know if you work today or tomorrow, but, if you grab any cookbook by Isa Chandra Moskovitz from the shelf, it will have amazing ideas. If you want to just have one recipe for this week, I recommend a recipe called "Dragon Green Beans" by her. It uses fresh green beans, almonds or cashews (or any nut/seed, really, or peanuts), soy sauce, cooking oil, sriracha, salt, pepper, and lots of garlic. I found an adaptation here:

Also, honestly, you can probably veganize any favorite recipe! Also, these days you can get nutritional yeast at most stores, like Sprouts, TJ's, many more. It tastes so good on avocado toast!!
