This has been my favorite meal since I was a little girl, and we got it out of a Campbell's soup cookbook.
Lemon Broccoli Chicken (serves 4)
4 boneless, skinless chicken breasts
2 lemons
4 servings of broccoli (frozen or fresh)
4 servings of white rice (I use 2 cups in the rice cooker)
3 to 4 cans of Campbell's Cream of Broccoli soup (I use 4 because I like gravy all over everything!)
1/2 cup or so of milk
pepper to taste
1. Start rice cooking, either on stove, or in rice cooker.
2. Cook chicken breasts on stove with a little bit of vegetable oil.
3. Mix in a large bowl: soup, milk, juice of 1 lemon, and pepper. (add more lemon juice if you like it lemon-y, which I do!)
4. Drain chicken; slice 2nd lemon into thin slices.
5. Pour soup mixture over chicken in pan; place lemon slices over it, and cook on low-medium heat (bring to bubble).
6. Cook broccoli (fresh- boil on stove; frozen- in microwave or on stove)
7. After chicken and gravy have been simmering/bubbling for a while, and rice is ready, you are done! Serve either on top of rice, or next to it. (Obviously don't eat the lemons; they're just for looks!)
